Maize is the primary source of daily caloric intake for many populations around the world. In Kenya, for example, over 85 percent of the population depends on maize as their main source of calories. Yet calories (energy) alone are not sufficient to sustain a healthy body and maize has limited nutritional value. Nonetheless, maize—including maize flour and maize meal—is critical to smallholder farming livelihoods and the food security of both rural and urban households.
